Surprise! You can transform Kodiak® Buttermilk Power Cakes® into delicious Cake Batter Blondies in just a few easy steps. Yes, the same Power Cakes mix that has 100% whole grains and 15g of protein per serving. And yes, this gift of a recipe takes less than an hour to make. And for extra protein, we’ve mixed some Greek Yogurt into the frosting. All you have to do now is celebrate with a big ole bite (or two 😉 ).

Ingredients

Blondies:

  • 1-1/2 sticks unsalted butter
  • 1-1/2 cups sugar
  • 3/4 cup brown sugar
  • 2 teaspoons pure vanilla extract
  • 3 eggs
  • 3 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • Colorful sprinkles

 

Frosting:

  • 1 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1/4 cup plain Greek yogurt
  • 1/2 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • Colorful sprinkles

Directions

  1. Preheat oven to 350° F. Grease bottom of 13x9" pan and set aside.
  2. In a large mixing bowl, combine butter, sugars, vanilla and eggs. Add Kodiak mix and gently fold in sprinkles.
  3. Pour in greased pan and spread evenly.
  4. Bake for 20-25 minutes, until an inserted knife comes out clean. Allow to cool completely while you make frosting.
  5. Combine all frosting ingredients in a large mixing bowl and mix until smooth.
  6. Spread on cooled blondies and top with sprinkles.
