Make your afternoon snack even more satisfying with Chewy Protein Cookies. Made using Kodiak Maple Brown Sugar PEAK Oatmeal, your post-workout, midday meeting, or after-school pickup only gets easier — in fact, everything is easier when you’re fueled with the good stuff. To level up, we’ve added the delicious taste of white chocolate chips (optional) to our batch of protein cookies to satisfy that sweet tooth, but don’t let that stop you from mixing things up. Sub-in any of our PEAK Oatmeal flavors or use chocolate chips instead of white — this recipe comes together in under 20 minutes!

Ingredients
- 6 tablespoons butter, softened
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 2 egg yolks
- 3 packets Kodiak Maple & Brown Sugar PEAK Oatmeal
- 1/3 cup white chocolate chips (optional)
Directions
- Preheat the oven to 350° Fahrenheit. Line a baking sheet with parchment paper.
- Place the butter and brown sugar in a bowl and beat for 2 minutes, until light and fluffy. Beat in the vanilla and egg yolks.
- Add the oatmeal and white chocolate chips (if you so choose) to the mixture and mix in until combined. Let sit for 5 minutes.
- Place scoops of cookie dough on the parchment-lined baking sheet, two inches apart. There should be enough batter to make eight cookies. Press each scoop down slightly with the palm of your hand.
- Bake for 10-12 minutes in the preheated oven, or until lightly golden brown on top.
- Remove and let cool slightly. Move to a wire rack and cool completely. Store in an airtight container.
