Dark Chocolate Cherry Scones

Ingredients
- 2 cups Kodiak Chocolate Chip Power Cakes Flapjack & Waffle Mix
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 6 tablespoons butter, cold, cubed
- 1/2 cup frozen cherries, thawed & chopped
- 1/2 cup heavy whipping cream
- 1 egg
- 1/4 cup coarse sugar
Directions
- Preheat the oven to 400° F. Line a baking sheet with parchment paper and set aside.
- In a mixing bowl, whisk together the Kodiak mix, granulated sugar, and baking powder.
- Cut the butter into the dry ingredients until it is the size of small lentils.
- Toss the cherries evenly through the mixture. Pour the cream over the mixture and fold in until fully combined. The mixture will be crumbly. Let sit for 10 minutes for the liquids to absorb.
- Place the dough on a clean surface and pat down to a thickness of 1-inch. Use a rolling pin to keep the mass even.
- Use a biscuit cutter to cut shapes out of the dough, placing them 2 inches apart on the prepared baking sheet. Press scraps together and flatten, cutting out shapes until there is no dough left. This recipe should make about eight scones.
- Beat the egg and brush over the tops of the scones. Sprinkle the top of each scone with 1 teaspoon of coarse sugar.
- Bake in the preheated oven for 13-15 minutes, or until golden brown on top.
- Cool and store in an airtight container.
