Ingredients

Dry Breading Mix:

  • 1 cup Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1/2 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional, for spice)
  • 1/2 tsp black pepper
  • 1/2 tsp salt

 

Wet Batter:

  • 1/2 cup Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1/2 cup water (adjust for consistency)

 

  • Oil: Enough for frying (e.g., vegetable or peanut oil)

Directions

  1. Drain the pickle chips well and pat them dry with paper towels. This prevents the breading from sliding off during frying.
  2. Combine the dry breading ingredients in a shallow bowl. In another bowl, whisk together the Kodiak mix and water until smooth to create the wet batter.
  3. Heat about 1-2 inches of oil in a deep skillet or pot to 350°F. Use a thermometer for accuracy.
  4. One at a time, dip the pickle chips into the wet batter, letting any excess drip off. Then, gently coat the pickle chip with the dry breading mixture and carefully place it in the hot oil. Careful not to overcrowd the pan.
  5. Fry for 2-3 minutes or until golden brown and crispy.
  6. Remove the fried pickle chips with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
  7. Serve hot with ranch dressing, spicy mayo, or your favorite dipping sauce.
