If there’s one thing folks love high up in the mountains it’s granola, and boy do we have a recipe for you! Featuring Kodiak Cakes Power Oats, this granola is sure to give you the energy you need first thing in the morning to tackle any sized adventure. Add dried fruit, nuts, and seeds for even more nutrients to get you up that mountain, over that peak, or just through that Monday morning meeting!

Ingredients

  • 2-1/2 cups Kodiak Cakes Power Oats
  • 1 cup raw nuts (almonds, walnuts, pecans, etc.)
  • 1/4 cup raw seeds (pepitas, sunflower seeds, chia seeds, etc.)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 egg white
  • 1/3 cup maple syrup or honey
  • 1/3 cup oil
  • 1/2 teaspoon vanilla extract
  • 3/4 cup dried fruit or chocolate chips (optional)

Directions

  1. Preheat oven to 300°F and line a sheet pan with parchment paper
  2. Combine Kodiak Cakes Power Oats, nuts, seeds, and salt in a large bowl
  3. In a separate bowl, whisk the egg white, maple syrup or honey, oil, and vanilla extract
  4. Stir the wet ingredients into the dry until combined
  5. Spread evenly onto the prepared pan
  6. Bake for 35-40 minutes undisturbed. Then, stir gently and continue baking for 5-10 minutes or until crispy. Let cool completely
  7. Stir dried fruit or chocolate chips into the cooled granola
  8. Store in a sealed container for up to 7 days
