Ingredients
- 2 cups Kodiak Classic Rolled Oats Oatmeal Canister
- 1/4 cup coconut oil, melted
- 1/2 cup honey
- 1/4 cup chia seeds
- 1/2 cup peanut butter
- 24 Chocolate chips (optional)
Directions
- Preheat the oven to 300°F. Grease a 24-cup mini muffin tin.
- Place the oats, coconut oil, honey, and chia seeds in a mixing bowl and stir everything together well. Let sit for five minutes to become a bit sticky.
- Place about a tablespoon of the mix in each greased muffin tin well. Press the mixture into each well firmly with the back of a tablespoon to make a cup shape.
- Bake the granola cups in the preheated oven for 30 to 35 minutes, or until golden brown.
- Remove from the oven and let cool for a few minutes. Using a butter knife, remove the cups from the muffin tin while still warm. They will become difficult to remove if they have cooled down completely.
- Let the granola cups cool completely on a wire rack. Fill each granola cup with 1 teaspoon of peanut butter and top with one chocolate chip (optional).
- Store in an airtight container.
