Ingredients

  • 2 cups Kodiak Classic Rolled Oats Oatmeal Canister
  • 1/4 cup coconut oil, melted
  • 1/2 cup honey
  • 1/4 cup chia seeds
  • 1/2 cup peanut butter
  • 24 Chocolate chips (optional)

Directions

  1. Preheat the oven to 300°F. Grease a 24-cup mini muffin tin.
  2. Place the oats, coconut oil, honey, and chia seeds in a mixing bowl and stir everything together well. Let sit for five minutes to become a bit sticky.
  3. Place about a tablespoon of the mix in each greased muffin tin well. Press the mixture into each well firmly with the back of a tablespoon to make a cup shape.
  4. Bake the granola cups in the preheated oven for 30 to 35 minutes, or until golden brown.
  5. Remove from the oven and let cool for a few minutes. Using a butter knife, remove the cups from the muffin tin while still warm. They will become difficult to remove if they have cooled down completely.
  6. Let the granola cups cool completely on a wire rack. Fill each granola cup with 1 teaspoon of peanut butter and top with one chocolate chip (optional).
  7. Store in an airtight container.
