When in the wild, GO WILD with these Orange Peel Muffins. You don’t even need a tin when you’ve got a juicy orange to hold all that hearty, baked goodness. And it’s simple to make. Srsly! Grab a couple large oranges, a box of your favorite Kodiak muffin mix, and bake it over a campfire. When your muffins are ready to bake, wrap them in a couple layers of tin foil and use a pair of tongs to place each one over hot coals in your campfire to cook for about 10 minutes. Take a moment to let it sink in that you just baked a muffin outdoors, then dig in!
Ingredients
- 6 large oranges
- 1 box Kodiak Blueberry Muffin Mix
- 1 cup water or milk
- 1/3 cup oil
- 2 eggs
Directions
- Slice the oranges in half and carefully hallow out the inside with a spoon
- In a bowl, mix the Kodiak Muffin mix, water or milk, oil, or eggs until combined
- Spoon the batter into 1/2 of the orange slice, filling it to the rim
- Place the top half of the orange over the filled slice and wrap in a couple of layers of tin foil
- Repeat with remaining batter
- Place the filled, foil wrapped oranges in the campfire on hot coals. Let cook in the fire for 8-10 minutes
- Remove from the fire using tongs. Let cool for 2 minutes before opening the foil
