Ingredients

Donuts:

  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup pumpkin puree 
  • 1/4 cup unsalted butter (melted)
  • 2-1/2 to 3 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1/2 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon 
  • 1 teaspoon vanilla 
  • 1 pinch salt

 

Glaze:

  • 4 tablespoons salted butter (melted)
  • 1/3 cup maple syrup 
  • 1 cup powdered sugar
  • 1 teaspoon vanilla 

Directions

  1. In a large Dutch Oven or fryer, heat oil over medium heat until the oil reaches 350° F. 
  2. Line a large plate with napkins or paper towels to soak up excess oil and set aside.
  3. In a large bowl, mix all wet ingredients with the brown sugar until combined. 
  4. Add Kodiak Power cakes, pumpkin spice, cinnamon, and salt, and mix until the dry ingredients are fully incorporated. Set aside.
  5. In a small bowl, combine all ingredients to make glaze. 
  6. When the oil reaches 350° F, take a cookie dough scoop, dip in oil, and shake it off. Scoop out dough balls and drop into the heated oil. Fry each dough ball for about 2-3 minutes on each side or until golden. Cook about 5-6 at a time depending on how big your pot is. Repeat process with the remainder of the batter.
  7. When donut holes are done cooking, place onto prepared cooling plate. After the donuts have cooled, coat with about 1/2 tablespoon of glaze and place 2 chocolate chips on each to make eyes and place onto cooling rack.
