Sneak in a serving of greens before 9 a.m. with help from these spinach pancakes! Just blend up some Kodiak Gluten-Free Flapjack & Waffle Mix with water and a handful of spinach, and you’re set. This spinach pancakes recipe packs a whole lot of what you need first thing in the morning into a simple stack of pancakes. Top 'em with a drizzle of maple syrup, fresh fruit, or a dollop yogurt for even more protein! They’re light, fluffy, and packed with (gluten-free) whole grains for a tasty breakfast that's as good for you as it is delicious!

Ingredients

  • 1 cup Kodiak Gluten-Free Frontier Cakes Flapjack & Waffle Mix
  • 1 cup spinach
  • 1 cup water

Directions

  1. Place spinach and water in a blender
  2. Blend on high speed for 30-60 seconds or until smooth
  3. Add Kodiak mix and continue to blend until combined
  4. Pour 1/4 cup of batter onto a heated and greased pan or griddle. Cook on medium-high heat or 375°F, until bubbles form on the top. Flip and continue to cook until golden brown
