Donuts don't always have to be a "guilty pleasure" with recipes like these strawberry glazed donut holes. Made using Kodiak® Carb-Conscious Flapjack & Waffle Mix, this recipe makes a lower carb option compared to what you might find at the local convenience store. And, you can satisfy your sweet tooth without all the added sugar.

Ingredients

Donut Holes:

  • 1 -3/4 cup Kodiak Carb-Conscious Flapjack and Waffle Mix
  • 3/4 cup buttermilk
  • 1/4 cup oil
  • 2 tablespoon sugar
  • 1 egg
  • 1 teaspoon vanilla extract

 

Glaze:

  • 1-1/2 cups powdered sugar
  • 1/2 cup chopped strawberries, puréed

Directions

  1. Preheat oven to 350° F and grease a mini muffin pan with oil
  2. In a large bowl, stir all ingredients together until combined, careful not to over mix
  3. Fill the mini muffin pan 3/4 full and bake for 10-15 minutes or until a toothpick comes out clean. Let cool completely
  4. Meanwhile, whisk the powdered sugar and strawberry pure together until smooth
  5. Dip the baked and cooled donut holes in the strawberry glaze to coat
  6. Let the glaze dry and harden
