Bring out the natural, sweet taste of a fresh peach with this grilled peaches and granola recipe. Simply combine Kodiak® Cinnamon Oat Power Cakes® with a handful of other ingredients, bake until crispy, and completely drool over your creation — we mean, add in your peaches, extra toppings, and dig in! Enjoy this combo as prepared for a summer inspired dessert or substitute Greek yogurt for ice cream to make a protein-packed breakfast that will keep you full ‘til lunch.

Ingredients

  • 2 cups oats
  • 1/4 cup Kodiak Cinnamon Oat Power Cakes Mix Flapjack & Waffle Mix
  • 1/2 cup nuts, seeds, or coconut flakes
  • 1/4 cup maple syrup
  • 1/4 cup oil
  • 1/2 teaspoon cinnamon
  • 4 peaches, pitted and cut in half
  • 2 cups vanilla ice cream

*Pro Tip: Sub-in any other spices or Kodiak Flapjack & Waffle Mix flavors to make your granola your own!

Directions

  1. Preheat oven to 350° F.
  2. Mix all ingredients in a large bowl until combined. Spread granola evenly on a lined baking sheet.
  3. Bake for 15 minutes, stir, then bake an additional 10-15 minutes or until crispy and golden.
  4. Brush maple syrup on the inside of the peaches and place on the grill until the peaches caramelize and grill marks form.
  5. Divide grilled peaches, ice cream, and granola into 4 bowls and serve.
