Ingredients

  • 4 Kodiak Buttermilk & Vanilla Thick & Fluffy Power Waffles, thawed
  • 1 cup black beans, cooked and warm
  • 4 large eggs
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1/4 cup Mexican crema 
  • 1 small jalapeño, sliced
  • 1/4 cup cotija cheese, crumbled

Directions

  1. Toast the waffles until golden.
  2. Heat a frying pan to medium and grease. Cook the eggs in the frying pan on medium, not disturbing until the whites have cooked through. Season with salt and pepper.
  3. Top each waffle with 1/4 cup black beans and one sunny-side-up egg.
  4. Top each egg with 1/4 of the sliced avocado, 2 tablespoons salsa, 1 tablespoon Mexican crema, 1 tablespoon Cotija cheese, and a few slices of jalapeño, if desired. Enjoy!
