These healthy zucchini banana muffins don’t take a lot of time to prepare, making them the perfect option for those days you don’t have a lot of time to spend in the kitchen. The best part is you can snack on these days after you’ve made them, so you always have a healthy snack option close at hand!

  • 1-1/2 cups Kodiak Cakes Buttermilk Power Cakes Mix
  • 3/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 large zucchini, shredded
  • 2 very ripe bananas, mashed
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract


  1. Preheat oven to 350 degrees.
  2. In a large bowl, add mashed banana, shredded zucchini, almond milk., vegetable oil, vanilla, and egg.
  3. Mix until combined.
  4. Add brown sugar and mix again.
  5. In a separate bowl, combine flour, salt, and baking powder.
  6. Add dry ingredients to wet ingredients, mixing after each addition. If the batter is too dry, add more almond milk.
  7. Fill muffin liners ¾ full with batter and bake for 12-15 minute or until toothpick comes clean.
  8. Let cool and enjoy!
