Ingredients
- 1-1/2 cups Kodiak Cakes Buttermilk Power Cakes Mix
- 3/4 cup brown sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 large zucchini, shredded
- 2 very ripe bananas, mashed
- 1 egg
- 1/4 cup vegetable oil
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees.
- In a large bowl, add mashed banana, shredded zucchini, almond milk., vegetable oil, vanilla, and egg.
- Mix until combined.
- Add brown sugar and mix again.
- In a separate bowl, combine flour, salt, and baking powder.
- Add dry ingredients to wet ingredients, mixing after each addition. If the batter is too dry, add more almond milk.
- Fill muffin liners ¾ full with batter and bake for 12-15 minute or until toothpick comes clean.
- Let cool and enjoy!
