Add a little touch of Italian class to your next brunch or breakfast soiree with this Butternut Squash Bruschetta. We’ve added our own Kodiak twist to this traditional appetizer by stacking warm, hearty butternut squash and crisp Granny Smith Apples on top of one of our delicious, crispy, buttermilk frozen waffles. A sprinkle of goat cheese and a drizzle of balsamic vinegar are the finishing touches on this must try dish.
Ingredients
Roasted Butternut Squash:
- 2 cups butternut squash, cubed
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- salt and pepper to taste
Bruschetta:
- 2 Kodiak Buttermilk & Vanilla Power Waffles
- 4 tablespoons goat cheese
- 1/2 granny smith apple, sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
Directions
- Preheat oven to 400° F.
- Toss butternut squash in olive oil, balsamic vinegar, honey, salt, and pepper.
- Place squash on a baking sheet and roast for 15-20 minutes, stirring halfway through, until caramelized and tender.
- Toast waffles on the lowest setting until crispy and hot throughout.
- Spread 1 tablespoon goat cheese on each waffle.
- Top with apple slices, roasted butternut squash, balsamic vinegar, and honey. Serve warm.
