Ingredients
Roasted Butternut Squash:
- 2 cups butternut squash, cubed
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- salt and pepper to taste
Bruschetta:
- 2 Kodiak Buttermilk & Vanilla Power Waffles
- 4 tablespoons goat cheese
- 1/2 granny smith apple, sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
Directions
- Preheat oven to 400° F.
- Toss butternut squash in olive oil, balsamic vinegar, honey, salt, and pepper.
- Place squash on a baking sheet and roast for 15-20 minutes, stirring halfway through, until caramelized and tender.
- Toast waffles on the lowest setting until crispy and hot throughout.
- Spread 1 tablespoon goat cheese on each waffle.
