Ingredients

Crust:

  • 1-1/2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1/2 cup butter
  • 1/4 cup ice water

 

Filling:

  • 2 cups ricotta cheese
  • 3 eggs
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

 

Topping:

  • 1 tablespoon olive oil
  • 1 bunch asparagus
  • 1/2 teaspoon salt
  • 1 bunch radishes, cut in half
  • 1/2 cup watercress or arugula

Directions

  1. Add Kodiak mix to a large bowl. Cut the butter into cubes and work into the mix by hand. Add ice water. Mix until a dough is formed. Flatten the dough into a disc and refrigerate for 1 hour.
  2. Meanwhile, whisk the ricotta, eggs, milk, salt, and pepper together in a large bowl.
  3. Preheat oven to 375 degrees. Coat the asparagus and radishes with olive oil and salt. Place on a baking pan and roast for 15-20 minutes.
  4. On a floured surface, roll the disc of pie dough 1/4" thick and place into a tart pan.
  5. Fill with prepared ricotta filling and bake for 25-30 minutes. Remove from oven and let cool slightly before topping with roasted vegetables and watercress or arugula.
