Ingredients

  • 3 packets Kodiak Maple & Brown Sugar Peak Oatmeal Packets
  • 2/3 cup butternut squash purée 
  • 1/4 cup maple syrup 
  • 1/2 cup almond butter 
  • 1/4 cup milk 
  • 1/2 teaspoons cinnamon 
  • 1 cup powdered sugar 
  • 1-2 tablespoons milk

Directions

  1. Preheat the oven to 350° F. Line a 8x8” baking pan with parchment paper.
  2. Place the contents of the oatmeal packets in a mixing bowl along with the butternut squash purée, maple syrup, almond butter, milk, and cinnamon. Mix until well combined.
  3. Spoon the mixture into the prepared baking pan and carefully spread out until evenly distributed and smooth on top.
  4. Bake in the preheated oven for 20 to 25 minutes, or until cooked through. Remove from the oven and let cool completely.
  5. Once cool, remove from the pan and place on a cutting board. Cut into 12 bars.
  6. Place the powdered sugar and milk in a small mixing bowl. Whisk together until smooth, adding more or less milk, to achieve the desired consistency.
  7. Drizzle the icing over the top of the butternut squash oatmeal bars.
  8. Store in an airtight container.
