If there’s one food we all know that students love, it’s gotta be pizza... and these better-for-you mini Pizza Pancakes have protein, hearty whole grains (thank you Kodiak® Cubs Adventure Flapjacks™), and irresistible flavor that students of all ages crave! And the best part? You can feed your kids pizza every day of the week and feel good about it.

Ingredients

  • 12 Kodiak Cubs Buttermilk Adventure Flapjacks 
  • 6 tablespoons marinara sauce 
  • 12 tablespoons mozzarella cheese, shredded 
  • 12 slices pepperoni 

Directions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper. 
  2. Lay the flapjacks out, spaced evenly across the prepared baking sheet. 
  3. Spread a half tablespoon of marinara sauce over the top of each flapjack. 
  4. Sprinkle 1 tablespoon of shredded mozzarella over each marinara-topped flapjack. 
  5. Place one slice of pepperoni on the top of each flapjack. 
  6. Bake in the preheated oven for 12 to 15 minutes, or until cheese is bubbling and slightly golden on top. 
  7. Remove from the oven and let cool slightly before enjoying.
