Cardamom Fig Pancakes

Grab the cardamom, slice the figs, and flip some flapjacks. The layers of this breakfast stack are what your stomach has been growling for. It is an unlikely combo, that’s for sure, but it’ll have your taste buds wondering why you haven’t thought of these flavor pairings before.  


  • 1 cup Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 3/4 cup water
  • 1/4 teaspoon cinnamon 
  • 1/4 teaspoon cardamom 
  • 4 figs 
  • 2 tablespoons butter
  • 4 tablespoons almond butter
  • 1/4 cup chopped pecans 
  • 1/4 cup maple syrup


  1. Mix together the Kodiak power cakes, water, cardamom, and cinnamon.
  2. Slice figs into thin slices and set aside.
  3. Heat a large cast iron over medium heat and grease with 1/2 tablespoon butter. Place 3 fig slices together and pour pancake batter over the figs to cover. Repeat with remaining batter.
  4. Top the pancakes with almond butter, chopped pecans, a couple of fresh fig slices, maple syrup, and a sprinkle of cinnamon. Enjoy!
