Ingredients

  • 1 cup Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 3/4 cup water
  • 1/4 teaspoon cinnamon 
  • 1/4 teaspoon cardamom 
  • 4 figs 
  • 2 tablespoons butter
  • 2 tablespoons almond butter
  • 1/4 cup chopped pecans 
  • 4 tablespoons maple syrup

Directions

  1. Mix together the Kodiak power cakes, water, cardamom, and cinnamon.
  2. Slice figs into thin slices and set aside.
  3. Heat a large cast iron over medium heat and grease with 1/2 tablespoon butter. Place 3 fig slices together and pour pancake batter over the figs to cover. Repeat with remaining batter.
  4. Top the pancakes with almond butter, chopped pecans, a couple of fresh fig slices, maple syrup, and a sprinkle of cinnamon. Enjoy!
