Ingredients
- 1 cup Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 3/4 cup water
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 4 figs
- 2 tablespoons butter
- 2 tablespoons almond butter
- 1/4 cup chopped pecans
- 4 tablespoons maple syrup
Directions
- Mix together the Kodiak power cakes, water, cardamom, and cinnamon.
- Slice figs into thin slices and set aside.
- Heat a large cast iron over medium heat and grease with 1/2 tablespoon butter. Place 3 fig slices together and pour pancake batter over the figs to cover. Repeat with remaining batter.
- Top the pancakes with almond butter, chopped pecans, a couple of fresh fig slices, maple syrup, and a sprinkle of cinnamon. Enjoy!
