UNIQUE RECIPE IDEAS FOR THAT BIG BOX OF FLAPJACK MIX

Sam’s Club & Costco are two of the best places to buy Kodiak Cakes Buttermilk Power Cakes because you get three bags of mix per box. For some of you veterans, it may only take a few flapjack breakfasts to get through all three bags. But for others, it’s fun to get a little creative when it comes to using up all that mix. Here are three out-of-box recipe ideas to get you started.

BANANA BREAD

Total Time: 60 mins | Makes 12 Servings

Ingredients:

  • 1 cup (2-3) ripe bananas, mashed
  • 2 eggs
  • ½ cup brown sugar
  • ½ cup milk of choice
  • 1/3 cup coconut or canola oil
  • 1 tsp. vanilla extract
  • 1 tsp. ground cinnamon
  • 2 cups Kodiak Cakes Buttermilk Power Cakes
  • 1 cup walnuts, chopped (optional)

Directions:

  1. Preheat oven to 350°F. Grease and line the bottom of a loaf pan with parchment paper.
  2. In a large bowl, whisk the mashed bananas, eggs, brown sugar, milk, oil, vanilla, and cinnamon together until combined.
  3. Fold Kodiak Cakes mix and ¾ cup walnuts into the wet ingredients until no visible flour remains, being careful not to over-mix.
  4. Transfer batter into the prepared loaf pan and top with remaining walnuts.
  5. Bake for 40-45 minutes or until a toothpick into the center comes out clean.

MINI PIZZAS

Total Time: 30 mins | Makes 4 Servings

Ingredients:

  • 1 ½ cup Kodiak Cakes Buttermilk Power Cakes
  • 1/3 cup warm water
  • 1 ½ tbsp. olive oil
  • 1 cup pizza sauce
  • 1 cup mozzarella cheese
  • Additional toppings (onion, bell peppers, olives, mushrooms, pepperoni, etc.)

Directions:

  1. Preheat oven to 400°F.
  2. Combine Kodiak Cakes mix, water, and olive oil. Form into a soft dough.
  3. Divide the dough into 4 pieces and roll each into a ¼” circle.
  4. Top each crust with pizza sauce, cheese, and assorted toppings.
  5. Bake for 15 minutes or until the crust is golden and the cheese is melted.

BUTTERMILK BISCUITS

Total Time: 27 mins  | Makes 12 Biscuits 

Ingredients:

  • 2 cups Kodiak Cakes Buttermilk Power Cakes
  • 3 tbsp. sugar
  • 2 tsp. baking powder
  • ½ cup unsalted butter, cold
  • 1 egg
  • 2/3 cup milk
  • 2 tbsp. unsalted butter, melted

Directions:

  1. Preheat oven to 425°F.
  2. In a large bowl, stir Kodiak Cakes mix, sugar, and baking powder together.
  3. Cut the cold butter into cubes and work into the flour by hand until crumbly.
  4. Stir in egg and milk until a dough forms.
  5. Empty the dough onto a floured surface and roll ½” thick.
  6. Use a biscuit cutter or drinking glass to cut biscuits from the rolled dough. Place cut biscuits on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until golden.
  8. Remove from the oven and brush with melted butter.
