This Peach Thyme Shortcakes recipe makes a delicious and healthy dessert thatâs great for parties or backyard gatherings. Made with Kodiak Cakes All-Purpose Baking Mix, each shortcake is also a great-tasting source of protein and whole grains, too!
Ingredients
- 1-1/2 cup Kodiak Cakes All Purpose Baking Mix
- 1/2 cup butter
- 1/2 cup coconut sugar, stevia or sweetener of choice
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 2 large whole eggs
- 10 oz frozen peaches
- 1-2 tablespoon honey
- 1 tablespoon fresh thyme
Directions
- Preheat oven to 350 degrees F. and lightly grease a shortcake pan or 10 spaces on a muffin tin
- Cream the butter and sugar in a stand mixer or a large bowl. Beating well until mixture is light and slightly fluffy. Add buttermilk, eggs and vanilla and mix well. Add Kodiak Cakes mix slowly
- Divide and portion mix into pan
- Bake for 15-17 minutes until the cake springs back and a toothpick incenter in the center comes out clean
- While cakes are baking add peaches, honey, fresh thyme and a small pinch of salt into a small pot. Heat on low-medium until mixture begins to bubble. Reduce heat and simmer for 2-3 minutes. Adjust sweetness if desired
- Serve cakes warm with peach mixture and whipped cream if desired
