Before you make these oven-baked shrimp, you'll want to light a few candles and turn on the Bing Crosby because this is the perfect main dish for a romantic holiday meal. This healthier version of a seafood favorite is not greasy and makes a crispy, crunchy, delicious dish that we suggest serving with your favorite cocktail sauce.

Ingredients

  • 1 lb. peeled shrimp, deveined tail intact
  • 1 egg
  • 1/4 cup Kodiak Cakes Buttermilk Power Cakes Flapjack and Waffle mix
  • 3/4 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 cup olive oil

Directions

  1. Preheat oven to 400° F and line a sheet pan with parchment paper. Drizzle olive oil onto the parchment paper
  2. Crack the egg into a medium bowl. Whisk and set aside
  3. In a separate bowl, mix the breadcrumbs, Kodiak Cakes Buttermilk Power Cakes mix, garlic powder, paprika, and salt together until combined
  4. Dip the shrimp into the egg and then into the breadcrumb mixture. Place the breaded shrimp on the pan and repeat for remaining shrimp
  5. Drizzle olive oil over the shrimp
  6. Bake for 5 minutes. Flip the shrimp and bake an additional 5 minutes or until crispy and golden. Serve with cocktail sauce
