
Ginger Almond Cookies

This cookie recipe makes a superfood snack you can enjoy as a post-workout treat or delicious dessert. It takes just 22 minutes to make and is made with Kodiak Cakes Energy Cakes to give each cookie a hearty helping of superfoods.
Ingredients
- 1 cup almond butter
- 1 large whole egg
- 1/4 cup Kodiak Superfoods mix
- 3 tablespoon Swerve or sweetener of choice
- 1 teaspoon baking powder
- 2 tablespoon milk of choice
- 2 teaspoon grated ginger
- 2 tablespoon candied ginger
- 2 tablespoon finely chopped almonds
Directions
- Preheat over to 350 degrees F and line a baking sheet with parchment paper or coat with non-stick spray
- Combine all ingredients into a large bowl(except candied ginger and chopped almonds)until well incorporated
- Portion and scoop dough onto prepared baking sheet(cookies will not rise much, so flatten into desired shape/size that you like)
- Press some candied ginger and chopped almonds onto the tops of each cookie
- Bake for 7-10 minutes
