No-Bake Chocolate Oatmeal Cookies

Pass on preheating your oven and instead opt for these No-Bake Chocolate Oatmeal Cookies. You'll still need a sheet pan, but instead of baking these delicious little guys can go straight into the fridge for up to 7 days. They're a must for little cubs who want to help in the kitchen but aren't quite ready for the oven yet.

Ingredients

  • 1 cup peanut butter
  • 1/2 cup chocolate chips
  • 1/2 cup coconut oil or butter
  • 1/4 cup sugar (optional)
  • 1 teaspoon vanilla extract
  • 2 cups Kodiak Cakes Power Oats Oatmeal Canister
  • 2 tablespoon cocoa powder
  • 1 cup optional stir-ins: chopped nuts, seeds, or dried fruit

Directions

  1. In a medium saucepan, melt the peanut butter, chocolate chips, and coconut oil over low heat until smooth
  2. Remove from heat and stir in vanilla extract
  3. Stir in the Kodiak Cakes Power Oats and cocoa powder, and optional stir-ins until combined
  4. Scoop cookies onto a sheet pan lined with parchment paper and refrigerate for 15-20 minutes or until set
  5. Store refrigerated for up to 7 days

Notes: *These cookies may melt when left at high temperatures and need to be stored in the fridge, making them a great choice for an after-school treat.
