Pass on preheating your oven and instead opt for these No-Bake Chocolate Oatmeal Cookies. You'll still need a sheet pan, but instead of baking these delicious little guys can go straight into the fridge for up to 7 days. They're a must for little cubs who want to help in the kitchen but aren't quite ready for the oven yet.
Ingredients
- 1 cup peanut butter
- 1/2 cup chocolate chips
- 1/2 cup coconut oil or butter
- 1/4 cup sugar (optional)
- 1 teaspoon vanilla extract
- 2 cups Kodiak Cakes Power Oats Oatmeal Canister
- 2 tablespoon cocoa powder
- 1 cup optional stir-ins: chopped nuts, seeds, or dried fruit
Directions
- In a medium saucepan, melt the peanut butter, chocolate chips, and coconut oil over low heat until smooth
- Remove from heat and stir in vanilla extract
- Stir in the Kodiak Cakes Power Oats and cocoa powder, and optional stir-ins until combined
- Scoop cookies onto a sheet pan lined with parchment paper and refrigerate for 15-20 minutes or until set
- Store refrigerated for up to 7 days
